I’m not much of a baker, I made a few errors. Shredded instead of granular dessicated coconut being a big one. Turns out I used coconut flour instead of white, I found the label tucked away inside the jar. But there’s no unmixing stuff so I’ve got this batch of maybe carlos.
If that is true I take the mad scientist approach most of the time and make things up as I go. It usually gives a pretty good result. If you want something really specific or finicky (like a sponge cake) you need to be very precise about everything, but most baking is actually pretty forgiving once you’ve learned the basic techniques.

Tried one. They’re tasty, but they’re a chewing commitment. Should have used more lemon zest too.
Monte Carlos dont have jam for they? I thought it was some sort of sticky sherbet?
