The best ones to use are these type There’s a bit of an art to using them, but there’s plenty of tutorials on YouTube. Once you get the hang of it, it’s a very relaxing process. You also don’t need the dual block set. I’ve got one with one double sided block, and it works great. These will work on all quality knives and can make shitty ones into very sharp ones.
