Just came back from brunch with a friend - she’d cooked a very nice variation on hashbrowns. Thinnish layer of mashed spud in a lined lamington tray, layer of smoked salmon, another layer of mashed spud. Then chilled, cut in sections, breaded and fried.
End result was a hash brown with a distinct layer of fish in the middle. She served these with a poached egg on top and a side of avocado salsa.
Very nice indeed and a good brunch dish.
Is this not one of those recipes we all grew up with? My mum would bust this out for a low effort cheap dinner as a way to get us to eat some veg. mashed potato mixed with some canned tuna, shaped into patties, dunked in some breadcrumbs and lightly fried. You can vary it up till the cows come home, chuck in some lentils, corn, more or less veg, more or less herbs and spices. its pretty good and freezes half decent for a reheat in the airfryer.
Very similar. Using a layer of smoked salmon makes it fancy pancy.
I don’t mean to be rude but I’m hesitant to fry smoked salmon inside stuff like that

Smoke salmon gently fried is delicious. Gently heated inside a pie, or similar is fine and can be delicious.
