Baked beans.
Everything has become too hard this week, good thing the kids love them.
I have lots of happy memories of my mum saying things like “I’m not cooking tonight, we’ll have _______” where that could be baked beans, toasted sandwitches or something else. I never understood how she could say “I’m not cooking” and then proceed to cook. I never had any appreciation for the amount of effort different dinners took on her part.
Tonight I made Southern pepper curry from Spice Tailor and some pappadums

Spiced Mango butterflied/boneless chicken with steamed veg.
From Aldi, highly recommend and easy as to cook, 40mins and you done.
Edit: Well is fully overruled by the family, we made a cottage pie from scratch, but I still got to get it the Global veggie chopper and do the fun stuff.

It’s a great easy meal that the kids will eat, the left overs are diced and chucked into a beans and rice dish the next night.
I like this one, too. It’s almost like cheating - the calibre of the end product does not reflect the time and effort put into cooking it.
Might make some pizzas using Turkish bread. Seems a lazy, not too unhealthy option

By myself tonight so I’m heating up a beef burgundy pie, which I shall have with lashings of sauce. Possibly followed by some strawberries with icecream.
The request from the man of the house is loaded hot dogs. I’ve spent the day in the garden so that suits me just fine.
