There are rice cooker meals if you’re interested? I think I saw one recipe with vegetables and cubed tofu. (Savor Delights is on Tik Tok but I refuse to get the app to consistently be able to watch them. So I found a link elsewhere.)

You can grate veg instead of chopping to make it cook faster and use less prep space, buy pre chopped or use frozen veg to avoid chopping at all. TVP is a no drain no chop substitute for tofu if desperate.

If you have no rice cooker an electric frypan or a normal skillet does fine

I’ve got a rice cooker but I would die without it (it’s old and second hand but a good brand), don’t want to risk somehow messing it up with anything fancier than takikomi gohan in it once in a while.

With one pot meals, I don’t mind making rice separately to that - one big batch is worth cleaning the rice cooker pot and inserts for (and I never washed them in the dishwasher so I’m used to doing that by hand, at least).

That’s valid. I even used to make one pot meals in a saucepan with a lid. Maybe you can get a basic beater you don’t really care about from the op shop and donate it back when you move.

Making separate rice and viands means there will be enough for a few meals which reduces washing.

Storage is annoying… I found saucepans can fit in the oven for storage but I had to take the lids off (as I left the oven racks in). You can hang pots as well
