You can use a plugin like Elementor or Visual Composer to jazz up your layout. Inside Wordpress you can change colours and a bit of the appearance, but you’re limited to blog style text block layouts unless you know how to go deep with HTML and CSS.

Oh this is helpful, I’ll try out Elementor. I’ve been going to the website view inside Wordpress, clicking edit header / edit page and trying to make changes that way. But it’s really limited in what I can change. Any layout change with a theme block is basically a no go, so I’ve been trying to find a theme with the best layout possible that I don’t need to fiddle around with too much.

That’s where plugins like Elementor are great. They work with any theme so you can find one you like, and use Elementor to actually build your pages.
