What’s for dinner tonight?

I wanted to try this, but OVER THREE HOURS cook time, already too late and will save that for the weekend.
Oh man…do you not know thw wonders of slow/braise cooking?
This was absolutely essential when the kids were little and I was working a lot. I usually had a sunday off and my wife and kids were running errands and such I would throw something like this together and go watch ('merican) football or play video games, and when they came home “tah daah” dinner is ready!
“oh you poor dear, your only day off and you’re cooking!” got me a lot of brownie points.
Here is a tip though if the thought of this is intimidating because of the time: most of it is just sitting in the oven so I would get it prepared at the same time as cooking tonights dinner, then all you have to do is throw it in the oven the next day.
It looks like a great recipe, you should try it.
I’m a full time house hubby, wannabe be chef and SBS cooking channel tragic.
It’s not the length, or complexity, I just left it too late in the day to start a long cook and feed a couple monsters before they went full feral.
The beasts must be appeased!

That looks good. If you don’t have a mandoline, it makes it a bit harder but you can use potato gems instead. The kids would love that. Definitely a weekend meal.
As for tonight, whenever I can’t decide, I give that decision to another fam member or it’s jaffles.
I’ve got a mandoline slicer and any excuse to use it is welcome.
I ended up going to a backup frozen meal, chicken and veg pie from Dinner Ladies, they’re bloody expensive, but worth every cent having a couple in the freezer.
I did however buy everything we needed for that Aldi recipe, including the wine, so I’ll cook and drink that Saturday afternoon. 🤣

It’s pretty good, plenty of chicken and veg chunks and feeds 2 adults and 2 primary ages kids.
A wealthy relative gave close family members a $300 gift voucher during a lockdown and we’ve been hooked every since. They look expensive, but the quality is high and it’s cheaper than a couple good pizzas delivered.
The Dinner Ladies have some good recipes online too. Simple, no nonsense bullshit and tasty.
Cabbage stew with bacon and tomato sauce (a simplified version of hunter’s stew).
Taco beans on potato with salsa and parmesan powder. I wont buy the McCromicks Taco mix again because it’s 50% flour and sugar, but it tastes like doritos.
Casarecce with hidden veg… I mean, totally normal Bolognese 😉
