    I made a fritatta with spinach

    -4 eggs, dollop sour cream, salt pepper and dill (had some fresh to use). Whisk

    • saute some onion and garlic and pile a bunch of spinach leaves on top and let wilt.
    • mix through. Add some mushies because i forgot earlier
    • pop some tomato slices and fetta on top
    • oven for ~20 mins

    Had with coleslaw and some thinly sliced beetroot and sweet potato roasted (povo chips)

    Was good. Will be lunch tomorrow too.

      This sounds like it’d be a good thing to make when I’ve got half a tub of sour cream and need to use it up. I’m saving this recipe greeeg, thankee.
