Whisk saute some onion and garlic and pile a bunch of spinach leaves on top and let wilt. mix through. Add some mushies because i forgot earlier pop some tomato slices and fetta on top oven for ~20 mins Had with coleslaw and some thinly sliced beetroot and sweet potato roasted (povo chips) Was good. Will be lunch tomorrow too.
