    Good night for a schnitzel. I’m turning mine into parmagiana using some leftover eggplant and tomato mix from a pide I made yesterday.

      I got the schnitzel out of the fridge and suddenly realised it’s been 15yrs since I cooked it at home, do you fry it or bake it, ended up doing both!

      Light brown in the pan and chucked it in they oven until it was golden. Turned out really moist without soaking up too much oil!

      Was really chicken and the variation in thickness was huge!
