Like if you’ve ever grown lettuce, picked some and put it into the fridge, it surprises you with how long it lasts! It’s truly eye-opening. Very true. Most of this stuff has come from the food waste market, so it is already on the precipice. With Christmas and a finger injury causing delays a bit of stuff just didn’t make it.
On the positive side, I’ve now got some pumpkin and zucchini roasting (to be frozen for future grilled sandwiches), I have enough for meals for the next few days to get me through until the next market, and I’m about to get onto cutting up some peaches and apricots for the freezer and to go into some overnight oats. That should use up pretty much everything and leave me with a clean slate.
