Tinned food basicallly does not go off. Some foods can slowly change things like texture or nutrient availability (especially vegetables) so it might not be quite as good after a while, but is a long and ongoing process. The dates on tinned food are basically a manufacturer’s best guess as to when the quality of the food will have deteriorated to the point they don’t recommend it as still being at its best, and they range from conservative estimates to completely made up. Especially if it is only just out of date I would have absolutely no hesitation in using it.
