Grilling sound best, if it was me I would do that, then slice them as thinly as possible with a sticky sauce to crisp them up on the pizza…I’m not a fan of bbq pizza but that is where my mind went…or maybe a pesto?
I ended up chargrilling the chicken and mixing the base tomato sauce with some BBQ sauce, topping with lots of cheese and some pineapple as well to keep it juicy. It was a nice change but I don’t know if I’d do it all the time, as I prefer my chargrilled chicken served in other ways.
