Not dinner but I saw these 2-ingredient “pancakes” online - one mashed banana whisked into two eggs. I added a pinch of salt and baking powder for fluffyness.
They were YUMMO. Had I not covered them in lashings of butter and maple syrup it would have been a decently healthy highish protein breakie too. It was weirdly like French toast.
I am not at ALL anti carbs but can’t eat gluten or oats and find I run better on higher protein (but meat is so $$$) so have been looking for easy quick breakfasts that keep me full.
