    I’m skeptical. Most Japanese soup broths are made with bones or milk.

      Most Japanese soups have neither of those things, but almost all of them do have dashi containing dried fish.

        Most, not all.

        The most common broths, like Tonkotsu, aren’t.

        Miso is my go-to.

      There’s absolutely vegan dishes! I’m not vegan these days but still, a shop near me has this rich, flavorful, wonderful vegan ramen that’s somehow not at all watery, and I’ll get that instead of other kinds regularly.
