Birthday party for a friend of ours tonight, she usually leaves town for it so we get to celebrate with her this year. So I’ve frenched some lechón (piglet) racks that I’ll smoke & BBQ with some baby back ribs; smoked apple, onion & red potato, eggplant parmesan with sundried tomato-parsley vinaigrette, apple cider slaw.
