Have you ever had pancakes or waffles made with almond or coconut flour? Holy shit they are so good, that extra bit of flavor? Changes everything. They do tend to be a bit heavier, but I’d argue that’s great for something like pancakes.
For bonus points, use pandan extract for flavoring instead of vanilla. It’ll turn them green, and it’s delicious. Goes well with the non-wheat flours.
(I don’t have any reason to avoid wheat flour, but I do have access to inexpensive non-wheat flours so I like to play around)
I bet if you separated the eggs and whipped the whites up before folding in the flour, yolks, etc it might alleviate some of the heaviness.

The waffle recipe I used had the whites whipped prior to adding other stuff, the flours themselves are just heavy (higher oil content and just different makeup) and work a bit differently. I think you’d probably need to reduce the flour amount and increase other stuff to fluff it up more, or maybe just mix a few different non-wheat flours together, but honestly I’ve only made them a handful of times so haven’t done a lot of tweaking. I don’t mind them being a bit heavier, personally, it makes them more filling and lasts a while, plus it’s more of a whole meal due to the protein and fiber.
If you have a discount grocery store near you for “slightly out of date” dry goods (past the sell by date, but perfectly fine otherwise - you often see the stores in rural areas), you can often find non-wheat flours there. Thats basically my strategy, my grocer is just cheaper than most due to exceptionally low overhead costs.
Or if your regular grocery discounts goods about to pass the sell by date to get rid of them, you might be able to find it cheap that way.

I’d think playing with baking powder and baking soda would help. Those are the ingredients that help make things puffier and fluffier.

If you think you’re doing your children a favor by feeding them junk/setting them up for diabetes, you’re not. If you really love your children, do things the hard way and the right way and feed them healthy.

Maybe their kid has underweight struggles and calories are calories. Maybe by everyday they mean everyday they have them every other weekend, but that’s too painful to say. You don’t fucking know, and this isn’t a life advice thread. Celebrate they have a kid they want to be involved with.
Calories are absolutely not calories. Being underweight is not a free pass to the buffet. The habits we create for our kids will become lifelong struggles. Normalize healthy eating and help them learn to make good choices.
Calories are calories when you have end stage cancer and trying to keep on the weight for the next chemo.
My parents had me nutritionally fucked-up until I fixed myself in my '30s. parents have a huge responsibility to learn nutrition and feed their children right, So their children start out with good nutrition and good eating habits, instead of wasting 20 to 30 years of their lives suffering from nutrition-related illnesses.

Yes I’m taking a moment to project my own issues here because I could have had a beautiful first 20 years if my parents hadn’t nutritionally fucked me up. It took me another 10 to 20 years to fix that. every child deserves a good start. It really sucks to spend the rest of one’s life undoing the damage our parents did.

For me it was making bacon for a sleepover. While making it, I realized it was something I’ve always wanted to do.
My girlfriend and her daughter will be moving in with me soon. I am so stupidly excited to go to zoos and aquariums and museums and take them to all the fun kid stuff.

Sometimes I like slicing up apples or pears, drizzling them with maple syrup and cinnamon, and baking them until soft while I make the pancakes themselves :)
I also enjoy smearing the pancakes with butter and sprinkling them with sugar for something simpler. Sometimes syrup is just to much for me.
