Using it to watch YouTube without logging in currently gets around that whole we don’t allow ad blockers thing.

I think they’re only worried about like, family or friends finding out. It’s not really a concern to them if an entity they don’t know has that info.
Which is one of the reasons I use it. If it’s not something I will want to pop up in my history later, then it goes in incognito. My history is only for things I plan to return to on a regular basis, not one time searches of random stuff.
