Don’t use three-day-old rice on your first attempt to do a roll with the rice on the outside.

      It’s proper sushi rice, vacuum sealed and rinsed until clear. Turned out perfectly when it was freshly made, but it had lost a lot of stickiness by the second day. I think I just overreached.
